Make this simple, rich Rocky Road Fudge using a quick microwave method. This no-bake recipe combines chocolate, marshmallows, and nuts for a decadent homemade candy perfect for holiday gifts or a quick sweet fix.

  • 1 (14 ounce) can sweetened condensed milk
  • 2 cups semi-sweet chocolate chips
  • 1 cup milk chocolate chips
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon salt
  • 2 cups mini marshmallows
  • 1 cup chopped walnuts or pecans
  • Cooking spray or parchment paper for an 8×8 inch pan

Instructions

  1. Prepare an 8×8 inch baking pan by lining it with parchment paper or lightly coating it with cooking spray. Set aside.
  2. In a microwave-safe bowl, combine the sweetened condensed milk, semi-sweet chocolate chips, and milk chocolate chips.
  3. Microwave on high in 30-second intervals, stirring well after each interval, until the chocolate is completely melted and the mixture is smooth. This usually takes 1.5 to 2 minutes total.
  4. Stir in the vanilla extract and salt until combined.
  5. Gently fold in the mini marshmallows and the chopped nuts. Work quickly so the marshmallows do not melt completely.
  6. Press the fudge mixture evenly into your prepared pan.
  7. Refrigerate for at least 2 hours, or until the fudge is firm enough to cut.
  8. Lift the fudge out of the pan using the parchment paper overhang. Cut into small squares. This makes a great Christmas fudge gift.

Notes

  • For a smoother texture, you can melt the chocolate and milk in a double boiler instead of the microwave.
  • If you prefer a different nut, almonds work well in this marshmallow nut fudge.
  • Store the finished fudge in an airtight container at room temperature for up to one week, or in the refrigerator for longer storage.
