  • 4 cups mixed berries (fresh or frozen)
  • 1/2 cup granulated sugar
  • 2 tablespoons cornstarch
  • 1 tablespoon lemon juice
  • 1 1/2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/2 cup cold unsalted butter, cut into pieces
  • 1/2 cup milk
  • 1 tablespoon coarse sugar, for sprinkling

Instructions

  1. Preheat your oven to 375°F (190°C). Lightly grease an 8×8 inch baking dish.
  2. In a bowl, gently toss the mixed berries with the granulated sugar, cornstarch, and lemon juice until the berries are coated. Pour this berry mixture into the prepared baking dish.
  3. To make the biscuit topping, whisk together the flour, baking powder, and salt in a separate medium bowl.
  4. Cut in the cold butter using a pastry blender or your fingers until the mixture resembles coarse crumbs.
  5. Pour in the milk and stir just until a shaggy dough forms. Do not overmix.
  6. Drop spoonfuls of the dough evenly over the berry filling. You do not need to cover the entire surface; gaps allow steam to escape and berries to bubble up.
  7. Sprinkle the coarse sugar over the topping.
