Make this quick homemade teriyaki sauce in under 15 minutes using simple pantry staples. This recipe yields a thick, glossy sauce perfect for marinating, glazing, or using in stir-fries.

  • 1/2 cup low sodium soy sauce
  • 1/2 cup packed brown sugar
  • 1/4 cup water
  • 2 tablespoons rice vinegar
  • 1 tablespoon fresh grated ginger
  • 2 cloves garlic, minced
  • 1 teaspoon sesame oil
  • 1 tablespoon cornstarch mixed with 2 tablespoons cold water (slurry)

Instructions

  1. Combine the soy sauce, brown sugar, water, rice vinegar, grated ginger, minced garlic, and sesame oil in a small saucepan.
  2. Place the saucepan over medium heat. Stir the mixture constantly until the brown sugar fully dissolves and the sauce begins to simmer.
  3. Once simmering, slowly whisk in the cornstarch slurry.
  4. Continue to cook, stirring constantly, for 1 to 2 minutes until the sauce thickens significantly and becomes glossy.
  5. Remove the sauce from the heat. It will continue to thicken as it cools.
  6. Use immediately as a glaze or marinade, or store in an airtight container in the refrigerator.

Notes

  • For a thicker sauce, increase the cornstarch slurry slightly in the next batch.
  • Substitute honey or maple syrup for brown sugar for a different sweetness profile.
  • This sauce works well as a dipping sauce for appetizers or as a savory vegetable topping.
