Ingredients
Scale
15 ounces whole milk ricotta cheese, drained
2 tablespoons olive oil
1 tablespoon fresh lemon juice
1/2 teaspoon salt
1/4 teaspoon black pepper
1/4 cup hot honey (or regular honey with a pinch of red pepper flakes)
1/4 cup chopped walnuts or pistachios
Fresh rosemary sprigs for garnish (optional)
Instructions
Place the drained ricotta cheese, olive oil, lemon juice, salt, and pepper into a food processor.
Process the mixture for 2 to 3 minutes, stopping to scrape down the sides as needed, until the dip is completely smooth and airy.
Transfer the whipped ricotta to a shallow serving bowl and spread it evenly.
Drizzle the hot honey over the top of the ricotta.
Sprinkle the chopped nuts over the honey.
Garnish with small sprigs of fresh rosemary, if using.
Serve immediately with crackers, crostini, or fresh vegetables for dipping.
Notes
If you do not have a food processor, you can use a high-powered blender or a stand mixer with the whisk attachment. Whip until very smooth.
To drain the ricotta, place it in a fine-mesh sieve lined with cheesecloth or a coffee filter over a bowl for at least 30 minutes. This step prevents a watery dip.
For a savory version, skip the hot honey and top with roasted garlic, fresh herbs like thyme, and a drizzle of good quality olive oil.
