  • 2 tablespoons olive oil
  • 1 tablespoon fresh lemon juice
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup hot honey (or regular honey with a pinch of red pepper flakes)
  • 1/4 cup chopped walnuts or pistachios
  • Fresh rosemary sprigs for garnish (optional)

Instructions

  1. Place the drained ricotta cheese, olive oil, lemon juice, salt, and pepper into a food processor.
  2. Process the mixture for 2 to 3 minutes, stopping to scrape down the sides as needed, until the dip is completely smooth and airy.
  3. Transfer the whipped ricotta to a shallow serving bowl and spread it evenly.
  4. Drizzle the hot honey over the top of the ricotta.
  5. Sprinkle the chopped nuts over the honey.
  6. Garnish with small sprigs of fresh rosemary, if using.
  7. Serve immediately with crackers, crostini, or fresh vegetables for dipping.
