Ingredients
Scale
1 cup fresh lemon juice
1 cup granulated sugar
4 cups cold water
1/2 cup heavy cream
1/4 cup strawberry syrup or grenadine (for color and flavor)
Ice cubes
Lemon slices and extra whipped cream for garnish
Instructions
Prepare the lemonade base: In a large pitcher, combine the fresh lemon juice, granulated sugar, and cold water. Stir until the sugar dissolves completely. This is your tart and sweet lemonade base.
Add the pink coloring: Stir in the strawberry syrup or grenadine until you achieve your desired pink color. Taste and adjust sweetness or tartness if needed.
Chill the base: Refrigerate the lemonade base for at least 30 minutes to make it very cold.
Whip the cream: In a separate bowl, use an electric mixer to whip the heavy cream until soft peaks form. Do not over-whip.
Assemble the drink: Fill serving glasses with ice. Pour the chilled pink lemonade base into the glasses, filling them about three-quarters full.
Top with cream: Gently spoon or pipe a dollop of the whipped cream mixture onto the top of each glass.
Garnish and serve: Garnish immediately with a lemon slice and a swirl of extra whipped cream, if desired. Serve right away for the best creamy texture.
Notes
For a natural pink color, substitute the syrup with 1/2 cup of pureed, strained strawberries or raspberries.
If you want a lighter drink, substitute half the water with club soda or sparkling water added just before serving.
This recipe makes a great party punch; scale up the base ingredients and serve the whipped topping separately for guests to add themselves.
