Hearty Texas Toast Sloppy Joes with Melted Cheese

Make this upgrade to the classic Sloppy Joe using thick, buttery Texas toast. This easy recipe is perfect for weeknight dinners or feeding a crowd.

  • 1 tablespoon butter
  • 1 medium yellow onion, chopped
  • 1 green bell pepper, chopped
  • 1 pound ground beef (80/20 recommended)
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup ketchup
  • 1/4 cup water
  • 2 tablespoons brown sugar, packed
  • 1 tablespoon Worcestershire sauce
  • 1 tablespoon yellow mustard
  • 8 slices Texas Toast (thick-cut bread)
  • 4 slices cheddar cheese, or preferred melting cheese

Instructions

  1. Melt butter in a large skillet over medium heat. Add the chopped onion and bell pepper. Cook until softened, about 5 minutes.
  2. Add the ground beef to the skillet. Break the meat apart with a spoon and cook until browned. Drain off any excess grease.
  3. Stir in the garlic powder, onion powder, smoked paprika, salt, and pepper. Cook for 1 minute until fragrant.
  4. In a small bowl, whisk together the ketchup, water, brown sugar, Worcestershire sauce, and mustard. Pour the sauce mixture over the beef.
  5. Bring the mixture to a simmer. Reduce the heat to low, cover, and cook for 10 minutes, stirring occasionally, to allow the flavors to combine. This is your savory sloppy joe filling.
  6. While the filling simmers, prepare the Texas toast. Place the slices on a baking sheet. Toast them lightly under the broiler or in a toaster oven until golden brown on one side.
  7. For extra flavor, spread a thin layer of butter on the untoasted side of each slice of Texas toast and place them butter-side up on the baking sheet. Broil for 1-2 minutes until the edges are crisp and golden. Watch carefully to prevent burning.
  8. Top four slices of the prepared Texas toast with the sloppy joe filling. Place one slice of cheese over the meat on each sandwich.
  9. Return the open-faced sandwiches to the broiler for 1-2 minutes, or until the cheese is melted and bubbly.
  10. Top with the remaining four slices of Texas toast to create four hearty sandwiches. Serve immediately.

Notes

  • For a saucier sloppy joe, increase the water in the sauce mixture to 1/2 cup.
  • Add 1/4 teaspoon of red pepper flakes with the spices if you want a little heat in your savory sandwiches.
  • If you are making these for a crowd, you can prepare the sloppy joe filling ahead of time and reheat it before assembling the sandwiches.
