Assemble this hearty, cheesy tater tot breakfast casserole the night before for a simple, crowd-pleasing brunch or holiday morning meal.

  • 1 (32 ounce) bag frozen tater tots
  • 1 pound breakfast sausage or bacon, cooked and crumbled
  • 1 cup chopped onion
  • 1 cup shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • 12 large eggs
  • 1 cup milk
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. Grease a 9×13 inch baking dish.
  2. Arrange half of the frozen tater tots in a single layer on the bottom of the prepared dish.
  3. Sprinkle the cooked sausage or bacon, chopped onion, and half of the shredded cheese over the tater tots.
  4. Top with the remaining tater tots.
  5. In a large bowl, whisk together the eggs, milk, salt, and pepper until fully combined.
  6. Pour the egg mixture evenly over the layers in the baking dish.
  7. Cover the dish tightly with plastic wrap or foil. Refrigerate for at least 4 hours or overnight.
  8. When ready to bake, preheat your oven to 375 degrees Fahrenheit. Remove the plastic wrap.
  9. Bake covered for 30 minutes.
  10. Remove the foil and sprinkle the remaining cheese over the top.
  11. Bake uncovered for an additional 10 to 15 minutes, or until the eggs are set and the cheese is melted and lightly golden.
  12. Let the casserole rest for 5 minutes before slicing and serving.

Notes

  • For a make ahead breakfast casserole, assemble everything except the final layer of cheese the night before and keep it refrigerated.
  • This recipe freezes well; cool completely, wrap tightly, and freeze for up to 3 months. Thaw overnight in the refrigerator before baking.
  • Use ground turkey or ham instead of sausage for variation.
