  • 4 (6 ounce) salmon fillets, skin on or off
  • 1 tablespoon olive oil
  • Salt and black pepper to taste
  • 4 ounces lump crab meat, drained
  • 4 ounces cooked shrimp, chopped
  • 4 ounces cream cheese, softened
  • 2 tablespoons mayonnaise
  • 1 clove garlic, minced
  • 1 teaspoon lemon juice
  • 1/4 cup panko breadcrumbs
  • 2 tablespoons fresh parsley, chopped

Instructions

  1. Preheat your oven to 400°F (200°C). Lightly grease a baking dish.
  2. Pat the salmon fillets dry. Using a sharp knife, cut a deep pocket horizontally into the thickest part of each fillet, being careful not to cut all the way through to the other side.
  3. In a medium bowl, combine the softened cream cheese, mayonnaise, minced garlic, and lemon juice. Mix until smooth.
  4. Gently fold in the lump crab meat and chopped shrimp. Mix just until combined.
  5. Carefully spoon the seafood stuffing mixture into the pocket of each salmon fillet. Press the edges lightly to close the opening.
  6. Place the stuffed salmon fillets in the prepared baking dish. Drizzle the tops with olive oil and season with salt and pepper.
  7. Sprinkle the panko breadcrumbs evenly over the tops of the stuffed fillets.
  8. Bake for 15 to 20 minutes, or until the salmon is cooked through and flakes easily with a fork, and the topping is golden brown.
  9. Garnish with fresh parsley before serving.
