12 Medjool dates
4 ounces cream cheese, softened
12 whole almonds
6 slices bacon, cut in half lengthwise
1 tablespoon honey (optional, for drizzling)
Instructions
Preheat your oven to 400 degrees Fahrenheit. Line a baking sheet with parchment paper.
Carefully slice each date lengthwise down one side and remove the pit.
Stuff each date cavity with a small spoonful of softened cream cheese.
Place one whole almond on top of the cream cheese filling in each date.
Wrap one half-slice of bacon tightly around each stuffed date, securing the filling. You may need a toothpick if the bacon does not stay closed, but try to wrap tightly enough to avoid one.
Place the wrapped dates seam-side down on the prepared baking sheet.
Bake for 15 to 20 minutes, or until the bacon is crisp and the dates are slightly caramelized.
Remove from the oven and let cool slightly on the baking sheet. If desired, drizzle with honey before serving warm.
Notes
For a different flavor, substitute goat cheese or mascarpone for the cream cheese.
If you prefer a less sweet flavor, skip the honey drizzle.
You can prepare these bacon wrapped dates ahead of time; cover and refrigerate them before baking. Add 5 minutes to the baking time if cooking straight from the refrigerator.
