1.5 lbs boneless, skinless chicken breasts, cut into 1-inch pieces
1 tablespoon olive oil
1 teaspoon chili powder
1 teaspoon smoked paprika
0.5 teaspoon cumin
0.5 teaspoon salt
0.25 teaspoon black pepper
2 cups frozen or fresh corn kernels
0.5 cup chicken broth
4 ounces cream cheese, cubed
0.5 cup mayonnaise or sour cream
0.5 cup cotija cheese, crumbled, plus extra for topping
1 lime, juiced
2 tablespoons fresh cilantro, chopped
1 jalapeño, minced (optional)
Instructions
Season the chicken pieces evenly with chili powder, smoked paprika, cumin, salt, and pepper.
Heat the olive oil in a large oven-safe skillet over medium-high heat. Add the seasoned chicken and cook until lightly browned on all sides, about 5 minutes. You do not need to cook it through.
Reduce the heat to medium. Add the corn kernels and chicken broth to the skillet. Stir to combine.
In a separate bowl, whisk together the cream cheese, mayonnaise or sour cream, half of the cotija cheese, lime juice, and minced jalapeño (if using).
Pour the creamy mixture over the chicken and corn in the skillet. Stir gently until the cream cheese begins to melt and the sauce thickens slightly.
Transfer the skillet to a preheated oven at 400 degrees Fahrenheit (200 degrees Celsius). Bake for 10 to 12 minutes, or until the chicken is cooked through and the sauce is bubbly.
Remove from the oven. Sprinkle the remaining cotija cheese and fresh cilantro over the top before serving.
Notes
For a grilled chicken with street corn salsa variation, grill the chicken separately and top with the corn mixture after it has been combined with the sauce ingredients (without baking).
If you do not have cotija cheese, substitute with crumbled feta cheese.
This recipe works well in an air fryer; cook at 375 degrees Fahrenheit for 12-15 minutes, checking chicken temperature.
