Make classic, comforting chicken noodle soup with minimal effort using your slow cooker. This hands-off recipe yields tender chicken and perfectly cooked noodles, ideal for busy weeknights or cold weather.

  • 2 pounds boneless, skinless chicken breasts or thighs
  • 8 cups low-sodium chicken broth
  • 2 cups water
  • 1 large carrot, chopped
  • 2 celery stalks, chopped
  • 1 medium yellow onion, chopped
  • 1 teaspoon dried thyme
  • 1 bay leaf
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 8 ounces egg noodles
  • 1/4 cup fresh parsley, chopped (for garnish)

Instructions

  1. Place the chicken breasts or thighs, chicken broth, water, chopped carrots, celery, onion, thyme, bay leaf, salt, and pepper into your slow cooker.
  2. Cover the slow cooker and cook on LOW for 6 to 7 hours or on HIGH for 3 to 4 hours, until the chicken is cooked through and tender.
  3. Remove the chicken from the slow cooker and place it on a cutting board. Shred the chicken using two forks. Discard the bay leaf.
  4. Return the shredded chicken to the slow cooker. Stir well to combine the flavors.
  5. Increase the slow cooker setting to HIGH if it is not already on high. Add the egg noodles to the soup.
  6. Cook for an additional 20 to 30 minutes, or until the noodles are tender. Watch closely to prevent the noodles from becoming mushy.
  7. Taste the soup and adjust salt and pepper if needed.
  8. Ladle the soup into bowls and garnish with fresh parsley before serving.

Notes

  • For the best texture, add the egg noodles during the last 30 minutes of cooking. If you add them too early, they will absorb too much liquid and become soft.
  • If you use pre-cooked or rotisserie chicken, skip the initial cooking step. Place the shredded chicken in the slow cooker with the broth and vegetables, and cook on LOW for 4 hours before adding the noodles.
  • To deepen the flavor, you can add 1 teaspoon of poultry seasoning along with the thyme.
