1 pound Italian sausage, casings removed
1 large onion, chopped
3 cloves garlic, minced
4 cups chicken broth
2 pounds Yukon Gold potatoes, peeled and cubed
1 teaspoon dried thyme
1/2 teaspoon dried rosemary
1/4 teaspoon black pepper
1/2 teaspoon salt (adjust to taste)
1 cup heavy cream
1/4 cup all-purpose flour (for thickening, optional)
1/4 cup cold water (for slurry, optional)
Instructions
Place the Italian sausage in a large skillet over medium heat. Cook the sausage, breaking it up with a spoon, until it is fully browned. Drain off any excess grease.
Transfer the browned sausage to the basin of your slow cooker.
Add the chopped onion, minced garlic, chicken broth, cubed potatoes, thyme, rosemary, pepper, and salt to the slow cooker.
Stir all ingredients together until combined.
Cover the slow cooker and cook on LOW for 6 to 8 hours or on HIGH for 3 to 4 hours, until the potatoes are tender.
About 30 minutes before serving, stir in the heavy cream.
If you desire a thicker soup, mix the flour and cold water in a small bowl to create a slurry. Stir the slurry into the soup and cook on HIGH for the remaining 30 minutes, stirring occasionally, until the soup thickens slightly.
Taste and adjust salt and pepper as needed before serving this cozy dinner recipe.
Notes
For a one-pot stovetop version, brown the sausage in a large Dutch oven. Add the remaining ingredients (except cream) and simmer until potatoes are tender, then stir in the cream.
You can substitute beef sausage or pork sausage for the Italian sausage if preferred.
