Make these Honey Garlic Butter Roasted Carrots for a simple, flavorful side dish. They caramelize perfectly in the oven, offering a sweet and savory glaze that works for weeknight dinners or holiday meals.

Ingredients

Scale
  • 2 lbs carrots, peeled and cut into 1-inch pieces
  • 4 tablespoons unsalted butter, melted
  • 3 tablespoons honey
  • 2 cloves garlic, minced
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Preheat your oven to 400 degrees Fahrenheit (200 degrees Celsius). Line a large baking sheet with parchment paper for easy cleanup.
  2. In a large bowl, combine the melted butter, honey, minced garlic, salt, and pepper. Whisk the mixture until it is well combined.
  3. Add the cut carrots to the bowl. Toss them thoroughly until every piece is evenly coated with the honey garlic butter mixture.
  4. Spread the coated carrots in a single layer on the prepared baking sheet. Do not overcrowd the pan; use two sheets if necessary to promote caramelization.
  5. Roast for 20 to 25 minutes, stirring halfway through the cooking time. The carrots should be tender when pierced with a fork and slightly caramelized on the edges.
  6. Remove from the oven and serve immediately as a family favorite roasted vegetable side dish.

Notes

  • For extra flavor, toss the carrots with 1/4 cup of grated Parmesan cheese during the last 5 minutes of roasting.
  • If your carrots are very thick, cut them into smaller pieces to ensure they cook evenly with the glaze.
  • To achieve perfectly caramelized roasted carrots, make sure the oven temperature is high enough and avoid overlapping the carrots on the baking sheet.
