  • 16 ounces cream cheese, softened
  • 3 cups sharp cheddar cheese, shredded, divided
  • 1/2 cup green onion, finely chopped
  • 1 teaspoon ranch seasoning mix
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • 1/4 teaspoon black pepper
  • 1/2 cup chopped pecans or extra shredded cheddar (for coating)
  • Kitchen twine
  • 1 small piece of bell pepper or celery stalk (for the stem)

Instructions

  1. In a large bowl, combine the softened cream cheese, 1 1/2 cups of the shredded cheddar cheese, green onion, ranch seasoning, garlic powder, onion powder, and black pepper. Mix until completely smooth and well combined.
  2. Take half of the remaining shredded cheddar cheese (about 3/4 cup) and mix it into the cheese base. Form the mixture into a tight ball shape.
  3. Place the ball on a piece of plastic wrap. Wrap it tightly.
  4. Take four pieces of kitchen twine, each about 12 inches long. Lay them across the ball in a star pattern (top to bottom, side to side). Gently pull the twine taut around the ball to create deep grooves that mimic pumpkin ribs. Secure the ends of the twine underneath the ball.
  5. Refrigerate the cheese ball for at least 2 hours, or up to two days, to allow it to firm up and hold the shape.
  6. When ready to serve, unwrap the cheese ball and gently remove the twine.
  7. Roll the cheese ball in the remaining 3/4 cup of shredded cheddar cheese (or chopped pecans) until fully coated.
  8. Re-wrap the twine loosely around the ball to re-establish the pumpkin lines.
  9. Insert the small piece of bell pepper or celery stalk into the top center to act as the pumpkin stem.
  10. Serve immediately with your choice of crackers, pretzels, or fresh vegetables.

Notes

  • You can make this stress-free appetizer up to two days ahead of time. Keep it wrapped tightly in the refrigerator. Remove the twine just before coating and serving.
  • For a different coating, use paprika for a reddish hue, or crushed pretzels for extra crunch.
