Make moist banana bread with added protein using Greek yogurt and your favorite protein powder. This recipe offers a familiar taste with better macros for a post-workout snack or healthy breakfast.

  • 3 very ripe bananas, mashed
  • 1/2 cup plain Greek yogurt (2% or full fat)
  • 1/4 cup melted coconut oil or butter
  • 1/2 cup brown sugar, packed
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 1/2 cup vanilla or unflavored whey protein powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground cinnamon

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour a standard 9×5 inch loaf pan.
  2. In a large bowl, combine the mashed bananas, Greek yogurt, melted coconut oil, and brown sugar. Mix until just combined.
  3. Whisk in the eggs and vanilla extract until smooth.
  4. In a separate medium bowl, whisk together the flour, protein powder, baking soda, salt, and cinnamon.
  5. Gradually add the dry ingredients to the wet ingredients. Mix only until no streaks of flour remain. Do not overmix.
  6. Pour the batter into the prepared loaf pan.
  7. Bake for 50 to 60 minutes, or until a toothpick inserted into the center comes out clean.
  8. Let the bread cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.

Notes

  • For an extra protein boost, stir in 1/4 cup of chopped walnuts or pecans with the dry ingredients.
  • If you use a flavored protein powder, you may need to slightly reduce the sugar content.
  • This bread freezes well when tightly wrapped in plastic wrap and foil.
