  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup granulated sugar
  • 1/2 cup (1 stick) unsalted butter, softened
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon almond extract
  • 1/2 cup buttermilk
  • 1/2 cup finely ground pistachios
  • 1/4 cup pistachio pudding mix (dry powder)
  • 1/2 cup shelled, chopped pistachios (for batter and topping)
  • For Topping: 2 tablespoons granulated sugar
  • For Topping: 1 tablespoon all-purpose flour
  • For Topping: 1 tablespoon cold butter, cut into small pieces

Instructions

  1. Preheat your oven to 400 degrees Fahrenheit. Line a 12-cup muffin tin with paper liners or grease well.
  2. In a medium bowl, whisk together the flour, baking powder, baking soda, salt, and dry pistachio pudding mix. Set this aside.
  3. In a large bowl, cream together the softened butter and 1 cup of sugar using an electric mixer until the mixture is light and fluffy. This step helps create fluffy pistachio muffins.
  4. Beat in the eggs one at a time, mixing well after each addition. Mix in the vanilla extract and almond extract.
  5. In a small bowl, whisk the buttermilk with the 1/2 cup of finely ground pistachios.
  6. Alternate adding the dry ingredient mixture and the buttermilk mixture to the butter mixture, beginning and ending with the dry ingredients. Mix only until just combined; do not overmix.
  7. Gently fold in the 1/2 cup of chopped pistachios reserved for the batter.
  8. Prepare the crumb topping: In a small bowl, combine the 2 tablespoons of sugar, 1 tablespoon of flour, and 1 tablespoon of cold butter. Use your fingers to cut the butter into the dry ingredients until a coarse, crumbly mixture forms.
  9. Divide the batter evenly among the 12 muffin cups, filling each about two-thirds full. Sprinkle the crumb topping over the top of each muffin.
  10. Bake at 400 degrees Fahrenheit for 5 minutes. Then, without opening the oven door, reduce the oven temperature to 375 degrees Fahrenheit and continue baking for an additional 15 to 18 minutes, or until a toothpick inserted into the center comes out clean. This high-heat start helps achieve bakery style pistachio muffins with domed tops.
  11. Let the muffins cool in the pan for 5 minutes before transferring them to a wire rack to cool completely.
