8 ounces cream cheese, softened
1 cup powdered sugar
1 teaspoon vanilla extract
1 cup heavy whipping cream
1/2 cup packed light brown sugar
1/4 cup butter
1/4 cup light corn syrup
1 cup chopped pecans
Dippers (graham crackers, apple slices, pretzels)
Instructions
Beat the softened cream cheese, powdered sugar, and vanilla extract together in a medium bowl until the mixture is smooth and creamy.
In a separate bowl, whip the heavy whipping cream until stiff peaks form. Gently fold the whipped cream into the cream cheese mixture until just combined. Spread this mixture into a shallow serving dish.
For the topping, combine the brown sugar, butter, corn syrup, and chopped pecans in a small saucepan.
Cook the topping mixture over medium heat, stirring constantly, until the butter melts and the mixture thickens slightly, about 3 to 5 minutes. Do not boil rapidly.
Pour the warm caramel pecan topping evenly over the cream cheese base.
Chill the dip for at least 1 hour before serving. Serve cold with your choice of dippers.
Notes
You can make the cream cheese base up to one day ahead and keep it covered in the refrigerator. Add the topping just before serving.
For a richer flavor, toast the chopped pecans lightly in a dry skillet before adding them to the caramel sauce.
