Make soft and chewy peanut butter Rice Krispie treats using this easy, no-bake recipe. These simple cereal bars are a nostalgic favorite.

  • 3 tablespoons unsalted butter
  • 1 cup creamy peanut butter
  • 1 package (10 ounces) miniature marshmallows
  • 6 cups crispy rice cereal

Instructions

  1. Lightly grease a 9×13 inch baking pan or line it with parchment paper. Set aside.
  2. In a large saucepan over medium-low heat, melt the butter.
  3. Add the peanut butter to the melted butter and stir until fully combined and smooth. Remove the pan from the heat.
  4. Add the marshmallows to the saucepan. Stir constantly until the marshmallows are completely melted and the mixture is smooth. Do not overheat the marshmallows.
  5. Remove the pan from the heat immediately. Stir in the crispy rice cereal until it is evenly coated with the marshmallow mixture.
  6. Transfer the mixture to the prepared baking pan. Lightly press the mixture into the pan using a piece of wax paper or lightly greased spatula. Do not pack the mixture down too firmly, as this makes the treats hard.
  7. Let the treats cool completely at room temperature for about 1 hour before cutting into squares.
  8. Cut into squares and serve.

Notes

  • For extra soft and gooey treats, use fresh marshmallows.
  • If you want a chocolate topping, melt 1 cup of chocolate chips with 1 tablespoon of peanut butter and spread over the cooled bars.
  • To prevent sticking when pressing the mixture, lightly grease your hands or the spatula you use.
