  • 1 pound smoked kielbasa sausage, sliced into half-moons
  • 1 tablespoon olive oil
  • 1 medium yellow onion, chopped
  • 2 cloves garlic, minced
  • 1 (14.5 ounce) can diced tomatoes, undrained
  • 4 cups chicken broth
  • 1 teaspoon dried Italian seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 12 ounces dry pasta (penne, rotini, or shells work well)
  • 1/2 cup heavy cream
  • 1/2 cup grated Parmesan cheese

Instructions

  1. Place the sliced kielbasa in a large pot or Dutch oven over medium heat. Cook until the sausage is lightly browned on both sides, about 5 to 7 minutes. Remove the sausage with a slotted spoon and set it aside, leaving any rendered fat in the pot.
  2. Add the olive oil to the pot if needed. Add the chopped onion and cook until softened, about 4 minutes.
  3. Add the minced garlic and cook for 1 minute until fragrant.
  4. Pour in the diced tomatoes (with juice), chicken broth, Italian seasoning, salt, and pepper. Bring the mixture to a boil.
  5. Add the dry pasta to the boiling liquid. Stir well to prevent sticking.
  6. Reduce the heat to medium-low, cover the pot, and simmer for 12 to 15 minutes, or until the pasta is cooked al dente and most of the liquid has been absorbed. Stir occasionally during this time.
  7. Stir in the cooked kielbasa, heavy cream, and Parmesan cheese. Cook uncovered for 2 to 3 minutes, stirring until the sauce thickens slightly and everything is heated through.
  8. Serve immediately.

Notes

  • You can substitute smoked sausage for kielbasa if needed for this one pot sausage pasta.
  • For added vegetables, stir in 1 cup of frozen peas or spinach during the last 5 minutes of cooking.
  • If the sauce seems too thick, add a splash more broth or milk when adding the cream.
