  • 1 pound smoked chicken sausage, sliced
  • 12 ounces pasta (penne or rotini recommended)
  • 1 tablespoon olive oil
  • 1 medium yellow onion, chopped
  • 2 cloves garlic, minced
  • 1 cup chicken broth
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 2 teaspoons Cajun seasoning (adjust to your spice preference)
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 cups fresh spinach
  • 1/4 cup sun-dried tomatoes, chopped (optional)

Instructions

  1. Heat the olive oil in a large, deep skillet or Dutch oven over medium-high heat. Add the sliced chicken sausage and cook until browned on both sides, about 4 to 5 minutes. Remove the sausage and set it aside, leaving any rendered fat in the pan.
  2. Add the chopped onion to the skillet and cook until softened, about 3 minutes. Add the minced garlic and cook for 1 minute until fragrant.
  3. Add the uncooked pasta, chicken broth, heavy cream, Cajun seasoning, salt, and pepper to the skillet. Stir well to combine everything.
  4. Bring the mixture to a boil, then immediately reduce the heat to low, cover the skillet, and simmer for 12 to 15 minutes, or until the pasta is cooked al dente. Stir occasionally to prevent sticking.
  5. Once the pasta is cooked, remove the skillet from the heat. Stir in the Parmesan cheese until the sauce is smooth and creamy.
  6. Return the cooked sausage to the pan. Stir in the fresh spinach and sun-dried tomatoes, if using. Cook just until the spinach wilts, about 1 to 2 minutes.
  7. Serve this fast pasta recipe immediately.
