Make these classic no bake cookies quickly using simple pantry staples. You get rich chocolate and peanut butter flavor in a chewy oatmeal cookie without using your oven.

Ingredients

  • 2 cups granulated sugar
  • 1/2 cup milk
  • 4 tablespoons unsalted butter
  • 1/4 cup unsweetened cocoa powder
  • 1/2 cup creamy peanut butter
  • 1 teaspoon vanilla extract
  • 3 cups quick-cooking oats

Instructions

  1. Combine the sugar, milk, butter, and cocoa powder in a medium saucepan.
  2. Bring the mixture to a full rolling boil over medium heat, stirring constantly. Boil for exactly one minute without stirring once it boils.
  3. Remove the saucepan from the heat immediately.
  4. Stir in the peanut butter and vanilla extract until fully melted and combined.
  5. Quickly mix in the quick-cooking oats until they are evenly coated.
  6. Drop rounded tablespoons of the mixture onto wax paper or parchment paper laid on a baking sheet.
  7. Let the cookies cool and set completely at room temperature for about 30 minutes before serving.

Notes

  • For a faster set time, you can place the cookies in the refrigerator for 15 minutes.
  • If you want a slightly different texture, substitute rolled oats for quick-cooking oats, but the final texture will be less uniform.
  • You can use crunchy peanut butter if you prefer texture in your cookies.
