1 pre-made 9-inch graham cracker crust
8 ounces cream cheese, softened
1 (14 ounce) can sweetened condensed milk
1 (8 ounce) can crushed pineapple, well drained
1 cup chopped pecans
1 teaspoon vanilla extract
1 cup frozen whipped topping (like Cool Whip), thawed
Optional: Maraschino cherries for topping
Instructions
In a large bowl, beat the softened cream cheese until it is smooth.
Add the sweetened condensed milk and vanilla extract to the cream cheese. Beat until the mixture is fully combined and creamy.
Gently fold in the well-drained crushed pineapple and the chopped pecans. Mix until they are evenly distributed throughout the filling.
Carefully fold in the thawed whipped topping until no white streaks remain. Do not overmix.
Spoon the entire filling mixture into the pre-made graham cracker crust. Smooth the top with a spatula.
Cover the pie loosely with plastic wrap. Chill the pie in the refrigerator for at least 4 hours, or until the filling is firm.
Before serving, slice and top each piece with a maraschino cherry, if you choose. This is a great potluck dessert idea.
Notes
Make sure the crushed pineapple is very well drained. Excess liquid will prevent your pie from setting properly.
For a variation sometimes called Million Dollar Pie, you can substitute the pecans with shredded coconut or add a layer of chocolate chips before chilling.
If you prefer a homemade crust, mix 1 1/2 cups graham cracker crumbs with 1/4 cup melted butter and press into a 9-inch pie plate. Bake at 350 degrees F for 10 minutes, then cool completely before filling.
