1 lb ground beef
1 packet taco seasoning
1 cup water
1 can (16 oz) refried beans, warmed
8 small flour tortillas (about 6 inches)
1 cup pizza sauce or enchilada sauce
2 cups shredded Mexican cheese blend
1 cup shredded Monterey Jack cheese
Cooking spray or oil for crisping
Instructions
Brown the ground beef in a skillet over medium heat. Drain any excess fat.
Add the taco seasoning and water to the beef. Stir and simmer for 5 to 7 minutes until the liquid reduces. Set aside.
Preheat your oven to 400°F (200°C). Lightly spray both sides of the flour tortillas with cooking spray or brush with oil.
Place four tortillas on a baking sheet. Bake for 5 to 7 minutes until they are lightly golden and crisp. Remove from the oven.
Spread a thin layer of warmed refried beans over each crispy tortilla.
Top the beans with a layer of the seasoned ground beef mixture.
Place the remaining four tortillas on top of the beef layer.
Spread pizza or enchilada sauce evenly over the top tortillas.
Sprinkle the Mexican cheese blend and Monterey Jack cheese over the sauce.
Bake for 8 to 10 minutes, or until the cheese is fully melted and bubbly.
Remove from the oven, let cool for a few minutes, then slice into wedges to serve.
