Make this simple, creamy marinated cheese appetizer ahead of time for your next gathering. It features cheddar and cream cheese soaked in a flavorful herb and oil marinade, perfect served with crackers.

  • 8 ounces sharp cheddar cheese, cut into 1/2-inch cubes
  • 8 ounces cream cheese, cut into 1/2-inch cubes
  • 1/2 cup olive oil
  • 1/4 cup white wine vinegar
  • 2 teaspoons dried Italian seasoning
  • 1 teaspoon garlic powder
  • 1/2 teaspoon dried oregano
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon salt
  • 1/4 cup chopped fresh parsley (for garnish)

Instructions

  1. In a medium bowl, combine the cheddar cheese cubes and cream cheese cubes.
  2. In a separate small bowl, whisk together the olive oil, white wine vinegar, Italian seasoning, garlic powder, oregano, black pepper, and salt until well combined. This is your herb marinade.
  3. Gently pour the herb marinade over the cheese cubes. Toss lightly to coat all the cheese pieces evenly.
  4. Transfer the cheese and marinade mixture to an airtight container.
  5. Cover the container and refrigerate for at least 4 hours, or preferably overnight, to allow the cheese to absorb the flavors. This is your make ahead step.
  6. Before serving, sprinkle the fresh parsley over the top for color.
  7. Serve cold or at room temperature with crackers or pita chips for a crowd pleasing appetizer.
