1 pound kielbasa sausage, sliced
1 tablespoon olive oil
1 medium onion, chopped
3 cloves garlic, minced
1 (14.5 ounce) can diced tomatoes, undrained
4 cups chicken broth
1 teaspoon dried Italian seasoning
1/2 teaspoon salt
1/4 teaspoon black pepper
12 ounces penne pasta
1 cup heavy cream
1 cup shredded cheddar-jack cheese
1/4 cup fresh parsley, chopped (for garnish)
Instructions
Slice the kielbasa sausage into half-inch pieces.
Heat the olive oil in a large pot or Dutch oven over medium heat. Add the sliced kielbasa and cook until lightly browned, about 5 minutes. Remove the sausage and set it aside, leaving any rendered fat in the pot.
Add the chopped onion to the pot and cook until softened, about 4 minutes. Add the minced garlic and cook for 1 minute until fragrant.
Pour in the diced tomatoes (with juice), chicken broth, Italian seasoning, salt, and pepper. Bring the mixture to a boil.
Add the penne pasta to the boiling liquid. Stir well to prevent sticking.
Reduce the heat to medium-low, cover the pot, and simmer for 12 to 15 minutes, stirring occasionally, until the pasta is tender and most of the liquid is absorbed.
Stir in the heavy cream and the cooked kielbasa. Heat through for 2 minutes.
Remove the pot from the heat. Stir in the shredded cheese until the sauce is smooth and creamy.
Serve immediately, garnished with fresh parsley.

For a budget friendly kielbasa recipe, you can substitute smoked sausage for kielbasa.
If you prefer a sharper flavor, use sharp cheddar cheese instead of cheddar-jack.
