Make this easy weeknight chicken dinner featuring tender chicken breasts coated in a sweet and spicy hot honey glaze, topped with creamy, melted feta cheese.

  • 4 boneless, skinless chicken breasts
  • 1 tablespoon olive oil
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup honey
  • 2 tablespoons hot sauce (adjust for spice level)
  • 4 ounces feta cheese, crumbled
  • 1 tablespoon fresh parsley, chopped (for garnish)

Instructions

  1. Preheat your oven to 400 degrees Fahrenheit. Lightly grease a large oven-safe skillet or baking dish.
  2. Pat the chicken breasts dry with paper towels. In a small bowl, mix the smoked paprika, garlic powder, salt, and pepper. Rub this spice mix evenly over both sides of the chicken breasts.
  3. Heat the olive oil in the skillet over medium-high heat. Sear the chicken breasts for 2-3 minutes per side until lightly golden. You are not cooking them through at this stage.
  4. While the chicken sears, whisk together the honey and hot sauce in a small bowl to create the hot honey glaze.
  5. Remove the skillet from the heat. Brush half of the hot honey glaze over the tops of the seared chicken breasts.
  6. Sprinkle the crumbled feta cheese evenly over the chicken.
  7. Transfer the skillet to the preheated oven. Bake for 15 to 20 minutes, or until the internal temperature of the chicken reaches 165 degrees Fahrenheit and the feta is soft and slightly bubbly.
  8. Remove the skillet from the oven. Brush the remaining hot honey glaze over the chicken and feta.
  9. Let the chicken rest for 5 minutes before garnishing with fresh parsley. Serve immediately with your choice of rice or roasted vegetables.

Notes

  • For a less spicy glaze, start with 1 tablespoon of hot sauce and taste before adding more.
  • If you do not have an oven-safe skillet, transfer the seared chicken to a standard baking dish before adding the feta and baking.
  • This flavorful chicken dish works well for meal prep; store leftovers in an airtight container for up to three days.
