Make this easy honey garlic chicken stir fry in 30 minutes for a juicy, vegetable-packed weeknight meal with a sweet and savory sticky glaze. This is better than takeout.

  • 1.5 lbs boneless, skinless chicken breasts or thighs, cut into 1-inch pieces
  • 1 tablespoon olive oil or sesame oil
  • 1 head broccoli, cut into florets
  • 1 red bell pepper, sliced
  • 1 cup carrots, sliced or julienned
  • 1/4 cup low sodium soy sauce
  • 1/4 cup honey
  • 2 tablespoons rice vinegar
  • 4 cloves garlic, minced
  • 1 teaspoon fresh ginger, grated
  • 1 teaspoon cornstarch
  • 2 tablespoons water
  • Cooked rice or noodles, for serving
  • Optional: Sesame seeds and sliced green onions for garnish

Instructions

  1. In a small bowl, whisk together the soy sauce, honey, rice vinegar, minced garlic, and grated ginger. Set aside half of this sauce mixture for later.
  2. In the remaining half of the sauce mixture, whisk in the cornstarch and water until smooth. This is your thickening slurry.
  3. Heat the oil in a large skillet or wok over medium-high heat. Add the chicken pieces and cook until browned and cooked through, about 5-7 minutes. Remove the chicken from the skillet and set it aside.
  4. Add the broccoli, bell pepper, and carrots to the same skillet. Stir fry for 4-6 minutes until the vegetables are tender-crisp.
  5. Return the cooked chicken to the skillet with the vegetables.
  6. Pour the reserved, unthickened sauce mixture over the chicken and vegetables. Stir to coat everything evenly.
  7. Pour the cornstarch slurry into the skillet while stirring constantly. Cook for 1-2 minutes until the sauce thickens into a sticky glaze.
  8. Remove from heat immediately. Serve the honey garlic chicken stir fry over rice or noodles. Garnish with sesame seeds and green onions if desired.

Notes

  • For extra flavor, use chicken thighs instead of breasts for a juicier result.
  • If you prefer a spicier sauce, add 1/2 teaspoon of red pepper flakes to the sauce mixture.
  • This recipe is meal prep friendly; store the stir fry separately from the rice until ready to eat.
