1 tablespoon vegetable oil
1 small yellow onion, chopped
2 cloves garlic, minced
1 tablespoon fresh ginger, grated
1 cup broccoli florets
1 cup sliced carrots
1/2 cup sliced red bell pepper
1/4 cup low-sodium soy sauce
2 tablespoons brown sugar
1 tablespoon cornstarch
1/4 cup water
1 teaspoon sesame oil
Cooked white rice or noodles, for serving
Instructions
In a small bowl, whisk together the soy sauce, brown sugar, cornstarch, and water to create the sauce mixture. Set aside.
Heat the vegetable oil in a large skillet or wok over medium-high heat. Add the ground beef and cook, breaking it up with a spoon, until fully browned. Drain off any excess grease.
Add the chopped onion, minced garlic, and grated ginger to the skillet with the beef. Cook for 2 minutes until fragrant.
