Make this easy ground beef stir fry skillet dinner in under 30 minutes. It uses a savory Asian sauce and fresh vegetables, perfect for serving over rice.

  • 1 tablespoon vegetable oil
  • 1 small yellow onion, chopped
  • 2 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 1 cup broccoli florets
  • 1 cup sliced carrots
  • 1/2 cup sliced red bell pepper
  • 1/4 cup low-sodium soy sauce
  • 2 tablespoons brown sugar
  • 1 tablespoon cornstarch
  • 1/4 cup water
  • 1 teaspoon sesame oil
  • Cooked white rice or noodles, for serving

Instructions

  1. In a small bowl, whisk together the soy sauce, brown sugar, cornstarch, and water to create the sauce mixture. Set aside.
  2. Heat the vegetable oil in a large skillet or wok over medium-high heat. Add the ground beef and cook, breaking it up with a spoon, until fully browned. Drain off any excess grease.
  3. Add the chopped onion, minced garlic, and grated ginger to the skillet with the beef. Cook for 2 minutes until fragrant.
  4. Add the broccoli florets and carrots to the skillet. Stir fry for 3 to 4 minutes until they begin to soften slightly.
  5. Stir in the red bell pepper and cook for 1 minute more.
  6. Pour the prepared sauce mixture over the beef and vegetables. Stir constantly until the sauce thickens and coats everything, about 1 to 2 minutes.
  7. Remove the skillet from the heat. Stir in the sesame oil.
  8. Serve the savory beef stir fry immediately over hot rice or noodles.

Notes

  • For a spicy kick, add 1 teaspoon of sriracha or a pinch of red pepper flakes when you add the garlic and ginger.
