  • 1.5 lbs chicken tenders (or boneless, skinless breasts cut into strips)
  • 1/4 cup fresh lemon juice
  • 1/4 cup olive oil
  • 2 cloves garlic, minced
  • 1 tablespoon dried oregano
  • 1 teaspoon dried thyme
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon dried rosemary

Instructions

  1. In a medium bowl or resealable bag, combine the lemon juice, olive oil, minced garlic, oregano, thyme, salt, pepper, and rosemary. This creates your lemon garlic chicken marinade.
  2. Add the chicken tenders to the marinade, making sure they are fully coated. Seal the bag or cover the bowl.
  3. Refrigerate the chicken for at least 30 minutes, or up to 4 hours, to allow the flavors to penetrate and tenderize the meat. Do not marinate longer than 4 hours due to the lemon juice content.
  4. Preheat your grill to medium-high heat (about 400°F) or heat a large skillet over medium-high heat. If using a skillet, add a small amount of oil.
  5. Remove the chicken from the marinade, letting excess drip off. Discard the remaining marinade.
  6. Grill the tenders for 4 to 6 minutes per side, or until the internal temperature reaches 165°F and the juices run clear. If pan-frying, cook for 4 to 5 minutes per side until done.
  7. Remove the juicy Greek chicken from the heat and let it rest for 5 minutes before serving.
