  • 1 tablespoon olive oil
  • 1 teaspoon chili powder
  • 1/2 teaspoon cumin
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 cups cooked white rice
  • 1 cup frozen or fresh corn kernels
  • 1/4 cup mayonnaise
  • 2 tablespoons sour cream or Greek yogurt
  • 1 tablespoon lime juice
  • 1/4 cup crumbled cotija cheese (or feta)
  • 2 tablespoons chopped fresh cilantro
  • Optional: Sliced avocado, extra lime wedges for serving

Instructions

  1. Season the chicken pieces with chili powder, cumin, salt, and pepper.
  2. Heat the olive oil in a large skillet over medium-high heat. Add the seasoned chicken and cook until browned and cooked through, about 6 to 8 minutes. Remove the chicken from the skillet and set it aside.
  3. In the same skillet, add the corn kernels. Cook for 3 to 5 minutes until slightly charred or heated through.
  4. While the corn cooks, prepare the sauce: In a small bowl, whisk together the mayonnaise, sour cream (or yogurt), and lime juice until smooth.
  5. To assemble the chicken rice bowl, divide the cooked rice among serving bowls.
  6. Top the rice with the cooked chicken and the prepared corn.
  7. Drizzle the creamy lime sauce over the chicken and corn.
  8. Garnish each bowl with crumbled cotija cheese and fresh cilantro. Serve immediately with avocado slices and extra lime if desired.
