Ingredients
Scale
8 ounces cream cheese, softened
1 cup sour cream
1 cup shredded Monterey Jack cheese
1 cup shredded sharp cheddar cheese
1 (4 ounce) can diced green chiles, drained
1 (4 ounce) can diced jalapeños, drained (use more for extra heat)
4 slices cooked, crumbled bacon (optional, but recommended)
1/2 cup mayonnaise
1/2 teaspoon garlic powder
1/4 teaspoon onion powder
Salt and pepper to taste
1/2 cup shredded cheddar cheese (for topping)
1/4 cup panko breadcrumbs (for topping)
Instructions
Preheat your oven to 375 degrees Fahrenheit. Lightly grease an 8×8 inch baking dish or a similar sized oven-safe skillet.
In a large bowl, combine the softened cream cheese, sour cream, mayonnaise, garlic powder, and onion powder. Mix until the base is smooth and fully incorporated.
Stir in the Monterey Jack cheese, sharp cheddar cheese, drained green chiles, drained jalapeños, and crumbled bacon, if using. Mix until all ingredients are evenly distributed.
Spread the mixture evenly into your prepared baking dish.
In a small bowl, mix the remaining 1/2 cup shredded cheddar cheese with the panko breadcrumbs. Sprinkle this topping evenly over the dip mixture.
Bake for 20 to 25 minutes, or until the dip is hot throughout and the topping is golden brown and bubbly.
Let the dip cool for 5 minutes before serving warm with tortilla chips, crackers, or vegetable sticks.
Notes
For a slow cooker version, combine all ingredients except the topping, place in a small slow cooker, and cook on low for 2 hours or high for 1 hour. Top with cheese and breadcrumbs and cook for an additional 10 minutes until melted.
If you prefer a milder dip, remove the seeds and membranes from the fresh or canned jalapeños before adding them.
This dip is excellent served with sturdy tortilla chips or toasted baguette slices for scooping.
