Make bite-size pizza muffins packed with cheese and pepperoni, perfect for snacks, parties, or packed lunches.

  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup milk
  • 1/4 cup vegetable oil
  • 1 large egg
  • 1 cup shredded mozzarella cheese
  • 1/2 cup pizza sauce
  • 1/2 cup mini pepperoni slices

Instructions

  1. Preheat your oven to 400 degrees Fahrenheit. Line a 12-cup muffin tin with paper liners or grease well.
  2. In a large bowl, whisk together the flour, baking powder, salt, and pepper.
  3. In a separate bowl, mix the milk, vegetable oil, and egg until combined.
  4. Pour the wet ingredients into the dry ingredients. Mix until just combined; do not overmix.
  5. Gently fold in the mozzarella cheese.
  6. Spoon the batter evenly into the prepared muffin cups, filling each about two-thirds full.
  7. Top each muffin with a spoonful of pizza sauce and a few mini pepperoni slices.
  8. Bake for 15 to 18 minutes, or until a toothpick inserted into the center comes out clean.
  9. Let the muffins cool in the tin for a few minutes before transferring them to a wire rack to cool completely.

  • These pizza muffins freeze well for quick lunch additions. Cool completely before freezing in an airtight container.
  • You can substitute the pepperoni with cooked, crumbled sausage or chopped vegetables like bell peppers.
  • For extra flavor, brush the tops lightly with melted garlic butter immediately after removing them from the oven.
