Ingredients
Scale
12 large eggs
1/4 cup milk or heavy cream
1/2 cup shredded cheese (cheddar or Monterey Jack)
1/2 cup cooked, crumbled sausage or bacon (optional)
1/4 teaspoon salt
1/8 teaspoon black pepper
Instructions
Preheat your oven to 350°F (175°C). Lightly grease a 12-cup standard muffin tin.
In a large bowl, whisk the eggs and milk or cream together until fully combined and slightly frothy.
Stir in the salt, pepper, shredded cheese, and any cooked meat or vegetables you are using for your low carb egg recipes.
Pour the egg mixture evenly into the prepared muffin cups, filling each about three-quarters full.
Bake for 15 to 20 minutes, or until the egg bites are set in the center and lightly golden. A knife inserted near the center should come out clean.
Let the egg bites cool in the tin for 5 minutes before carefully removing them.
Store these make ahead appetizers in an airtight container in the refrigerator for up to 4 days for your breakfast recipes for busy mornings. Reheat in the microwave for 30 to 60 seconds.
Notes
For a fluffier texture, use cottage cheese blended until smooth instead of milk.
You can customize these with spinach, bell peppers, or feta cheese for different flavor profiles.
These are excellent for family friendly egg meals when you need a fast, protein-packed breakfast.
