Prepare this simple, fluffy egg bake casserole the night before for stress-free mornings. It is packed with cheese and protein, making it a hearty, family-friendly breakfast or brunch dish that reheats well.

  • 1 cup cottage cheese (2% or whole milk for creaminess)
  • 1 cup milk (any kind)
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • 2 cups shredded sharp cheddar cheese, divided
  • 1 cup diced ham or cooked sausage (optional)
  • 1 tablespoon butter, softened (for greasing dish)

Instructions

  1. Grease a 9×13 inch baking dish with softened butter.
  2. In a large bowl, whisk together the eggs, cottage cheese, milk, salt, pepper, garlic powder, and onion powder until well combined and slightly frothy. This helps create a fluffy texture.
  3. Stir in 1 cup of the shredded cheddar cheese and any optional meat additions like ham or sausage.
  4. Pour the egg mixture evenly into the prepared baking dish.
  5. Cover the dish tightly with plastic wrap. Refrigerate for at least 4 hours, or preferably overnight, to allow the flavors to meld and the eggs to absorb moisture.
  6. When ready to bake, preheat your oven to 375 degrees Fahrenheit (190 degrees Celsius). Remove the plastic wrap.
  7. Sprinkle the remaining 1 cup of shredded cheddar cheese over the top of the egg mixture.
  8. Bake for 30 to 35 minutes, or until the center is set and a knife inserted near the middle comes out clean. The top should be golden brown.
  9. Let the egg bake rest for 5 minutes before slicing and serving. This is a great make-ahead breakfast idea.

  • For a higher protein breakfast packed bake, increase the cottage cheese to 1.5 cups.
