Make these easy, high-protein egg bites in a muffin tin. This recipe delivers fluffy texture similar to popular coffee shop versions and is perfect for quick breakfasts or freezer-friendly meal prep.

  • 12 large eggs
  • 1 cup cottage cheese (2% or whole milk for best texture)
  • 1/2 cup milk (any kind)
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup shredded cheese (Cheddar or Monterey Jack)
  • 1 cup cooked, crumbled bacon or diced ham (or 1 cup cooked vegetables like spinach or broccoli)

Instructions

  1. Preheat your oven to 350°F (175°C). Lightly grease a 12-cup standard muffin tin well.
  2. In a large bowl, whisk together the eggs, cottage cheese, milk, salt, and pepper until completely smooth. Using an immersion blender or regular blender helps achieve the fluffiest texture.
  3. Stir in the shredded cheese and your chosen mix-ins (bacon, ham, or vegetables). Do not overmix.
  4. Pour the egg mixture evenly into the prepared muffin cups, filling each cup about three-quarters full.
  5. Bake for 18 to 22 minutes, or until the egg bites are set and a toothpick inserted near the center comes out clean.
  6. Let the egg bites cool in the muffin tin for 5 minutes before carefully removing them.
  7. Serve warm immediately, or cool completely before storing for meal prep.

Notes

  • For a texture closer to Starbucks egg bites, blend the egg mixture until very smooth before adding mix-ins.
  • If using vegetables like spinach, sauté them briefly first to remove excess moisture before adding them to the batter.
  • These egg bites freeze well. Place cooled bites in a freezer-safe bag and freeze for up to one month. Reheat from frozen in the microwave for 60-90 seconds.
  • This is a great low carb egg bites base; omit any starchy vegetables to keep it keto friendly.
