Transform simple cabbage into a savory, tender side dish with crispy edges using this easy roasted cabbage recipe featuring garlic and Parmesan cheese. This melting cabbage is perfect for low carb diets and weeknight dinners.

  • 1 medium head green cabbage
  • 3 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon black pepper
  • 1/2 cup grated Parmesan cheese
  • 1 tablespoon fresh parsley, chopped (for garnish)

Instructions

  1. Preheat your oven to 400 degrees Fahrenheit (200 degrees Celsius). Line a baking sheet with parchment paper for simple cleanup.
  2. Remove any loose or wilted outer leaves from the cabbage. Cut the cabbage into 8 equal wedges, keeping the core intact to hold the leaves together.
  3. In a small bowl, whisk together the olive oil, minced garlic, salt, and pepper.
  4. Brush the oil mixture evenly over all sides of each cabbage wedge.
  5. Place the wedges cut-side down on the prepared baking sheet.
  6. Roast for 20 minutes.
  7. Remove the baking sheet from the oven. Flip the wedges over. Sprinkle the grated Parmesan cheese evenly over the top of each wedge.
  8. Return to the oven and roast for another 10 to 15 minutes, or until the cabbage is tender and the cheese is golden brown and slightly crispy.
  9. Remove from the oven, garnish with fresh parsley, and serve immediately as a delicious vegetable side dish.

Notes

  • For a richer flavor, you can substitute half of the olive oil with melted butter.
  • If you prefer softer edges, cover the baking sheet loosely with foil for the first 20 minutes of roasting.
  • This recipe works well with thick-cut cabbage steaks (halved or quartered heads) if you prefer larger portions.
