Make this simple, fresh Caprese Chicken bake for a flavorful, low-carb dinner ready in under 30 minutes. You get juicy chicken breast topped with mozzarella, tomato, and basil.

Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 tablespoon olive oil
  • 1 teaspoon dried Italian seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 4 slices fresh mozzarella cheese
  • 1 large ripe tomato, sliced
  • 1/4 cup fresh basil leaves, roughly chopped
  • 2 tablespoons balsamic glaze

Instructions

  1. Preheat your oven to 400 degrees Fahrenheit. Lightly grease a baking dish or line it with parchment paper.
  2. Place the chicken breasts in the prepared baking dish. Drizzle the olive oil over the chicken.
  3. Sprinkle the Italian seasoning, salt, and pepper evenly over both sides of the chicken breasts.
  4. Bake the chicken for 15 minutes.
  5. Remove the dish from the oven. Top each chicken breast with one slice of mozzarella cheese and a few slices of tomato.
  6. Return the dish to the oven and bake for another 5 to 7 minutes, or until the mozzarella is melted and bubbly and the chicken reaches an internal temperature of 165 degrees Fahrenheit.
  7. Remove the Caprese Chicken from the oven. Sprinkle the fresh basil over the top of each piece.
  8. Drizzle the balsamic glaze over the chicken before serving.

Notes

  • You can use chicken thighs instead of breasts; adjust the baking time as needed.
  • For a one pan chicken dinner, add asparagus spears to the dish during the last 10 minutes of baking.
