Make a moist, flavorful meatloaf using your slow cooker, incorporating stuffing mix for texture and taste. This recipe offers a simple, comforting meal perfect for family dinners.

Ingredients

  • 2 lbs ground beef (80/20 recommended)
  • 1 box (6 oz) Stovetop Stuffing mix (any flavor)
  • 1 cup beef broth
  • 1 large egg, lightly beaten
  • 1/2 cup finely chopped onion
  • 1/4 cup ketchup
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon dried parsley
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup brown sugar
  • 1/4 cup ketchup (for glaze)
  • 1 tablespoon apple cider vinegar

Instructions

  1. In a large bowl, combine the ground beef, stuffing mix, beef broth, egg, chopped onion, 1/4 cup ketchup, Worcestershire sauce, parsley, salt, and pepper. Mix gently with your hands until just combined. Do not overmix.
  2. Form the meat mixture into a loaf shape.
  3. Line the bottom of your slow cooker insert with a piece of parchment paper or foil, leaving overhang on the sides to lift the meatloaf out later. Place the meatloaf onto the prepared surface in the slow cooker.
  4. In a small bowl, whisk together the brown sugar, 1/4 cup ketchup, and apple cider vinegar to create the glaze. Pour this glaze evenly over the top of the meatloaf.
  5. Cover the slow cooker and cook on LOW for 4 to 5 hours, or on HIGH for 2.5 to 3 hours, until the internal temperature reaches 160°F.
  6. Carefully remove the meatloaf from the slow cooker using the parchment paper overhang. Let it rest for 10 minutes before slicing.
  7. If you prefer a slightly browned top, you may transfer the rested meatloaf to a baking sheet and broil for 2-3 minutes, watching closely to prevent burning.

Notes

  • For a richer flavor, use chicken or turkey broth instead of beef broth in the mixture.
  • If you do not have a slow cooker, you can bake this meatloaf in a 9×5 inch loaf pan at 350°F for about 60 to 75 minutes.
  • This recipe works well as an easy slow cooker lunch option when made ahead.
