  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 (15 ounce) can kidney beans, rinsed and drained
  • 1 (15 ounce) can black beans, rinsed and drained
  • 1 (15 ounce) can corn, drained
  • 1 (14.5 ounce) can diced tomatoes, undrained
  • 1 (10 ounce) can Ro-Tel (diced tomatoes and green chilies), undrained
  • 1 (10.75 ounce) can condensed cream of mushroom soup
  • 4 cups beef broth
  • 1 tablespoon chili powder
  • 1 teaspoon cumin
  • 1/2 teaspoon dried oregano
  • Salt and pepper to taste
  • Optional toppings: Shredded cheddar cheese, sour cream, chopped green onions

Instructions

  1. Brown the ground beef in a skillet over medium heat. Drain off any excess fat.
  2. Add the browned ground beef, chopped onion, and minced garlic to the basin of your slow cooker.
  3. Add the rinsed and drained kidney beans, black beans, and drained corn to the slow cooker.
  4. Pour in the diced tomatoes (with liquid), the Ro-Tel (with liquid), and the condensed cream of mushroom soup.
  5. Pour in the beef broth.
  6. Stir in the chili powder, cumin, and oregano. Season with salt and pepper.
  7. Stir all ingredients together until well combined.
  8. Cover the slow cooker and cook on LOW for 6 to 8 hours or on HIGH for 3 to 4 hours.
  9. Before serving this easy slow cooker soup, stir well. Taste and adjust seasonings if needed.
