  • 12 ounces pasta (fettuccine or penne work well)
  • 1 tablespoon olive oil
  • 2 tablespoons unsalted butter
  • 1 pound cremini or white button mushrooms, sliced
  • 4 cloves garlic, minced
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup heavy cream
  • 1/2 cup chicken broth or vegetable broth
  • 1 cup freshly grated Parmesan cheese, plus more for serving
  • 1/4 cup fresh parsley, chopped

Instructions

  1. Cook the pasta according to package directions until al dente. Reserve 1 cup of the starchy pasta water before draining. Set the drained pasta aside.
  2. While the pasta cooks, heat the olive oil and butter in a large skillet over medium-high heat.
  3. Add the sliced mushrooms to the skillet. Cook for 6 to 8 minutes, stirring occasionally, until the mushrooms release their liquid and start to brown. This step builds deep flavor.
  4. Reduce the heat to medium. Add the minced garlic, salt, and pepper to the skillet. Cook for 1 minute until the garlic is fragrant. Do not let the garlic burn.
  5. Pour in the heavy cream and broth. Bring the mixture to a gentle simmer and cook for 2 to 3 minutes, allowing the sauce to thicken slightly.
  6. Remove the skillet from the heat. Stir in the grated Parmesan cheese until the sauce is smooth and creamy.
  7. Add the cooked pasta to the skillet. Toss everything together to coat the pasta evenly. If the sauce seems too thick, add the reserved pasta water, one splash at a time, until you reach your desired consistency.
  8. Stir in most of the fresh parsley. Serve immediately with an extra sprinkle of Parmesan cheese and the remaining parsley on top.

Notes

  • For an even richer flavor, use a mix of wild mushrooms like shiitake or oyster mushrooms along with the cremini.
  • If you want to add protein, cook 1 cup of diced chicken breast first, remove it from the pan, and add it back in with the cooked pasta in Step 6.
  • Use high-quality Parmesan cheese; pre-grated cheese does not melt as smoothly into the sauce.
