  • 2 cups fresh spinach
  • 1 tablespoon soy sauce
  • 1 teaspoon cornstarch mixed with 1 tablespoon cold water (slurry)

Instructions

  1. Season the chicken pieces with salt and pepper.
  2. Heat the olive oil in a large pot or Dutch oven over medium-high heat. Add the chicken and cook until browned and cooked through, about 5 to 7 minutes. Remove the chicken and set it aside.
  3. Reduce the heat to medium. Add the butter to the pot. Once melted, add the minced garlic and Italian seasoning. Cook for 1 minute until fragrant; do not let the garlic burn.
  4. Pour in the chicken broth and bring the mixture to a simmer. Stir in the soy sauce.
  5. Whisk in the heavy cream and grated Parmesan cheese until the cheese melts and the broth is smooth. Let the broth simmer gently for 3 minutes.
  6. Add the ramen noodles to the simmering broth. Cook according to package directions, usually 3 to 4 minutes, until tender.
  7. Stir the cornstarch slurry into the broth to help thicken it slightly. Cook for 1 minute until the broth thickens to your liking.
  8. Return the cooked chicken to the pot. Stir in the fresh spinach until it wilts, about 1 minute.
  9. Divide the creamy garlic chicken ramen among bowls. Top with extra grated Parmesan cheese before serving.
