Ingredients

Scale
  • 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
  • 1 tablespoon olive oil
  • 4 slices bacon, cooked and crumbled
  • 1 (16 ounce) package potato gnocchi
  • 1 cup chicken broth
  • 1 (10.5 ounce) can cream of chicken soup
  • 4 ounces cream cheese, cubed
  • 1/2 cup heavy cream
  • 1 packet (1 ounce) dry ranch seasoning mix
  • 1 cup shredded cheddar cheese
  • 1/2 cup frozen peas (optional)
  • 2 tablespoons fresh parsley, chopped (for garnish)

Instructions

  1. Season the chicken pieces lightly with salt and pepper.
  2. Heat the olive oil in a large pot or Dutch oven over medium-high heat. Add the chicken and cook until browned and cooked through, about 5-7 minutes. Remove the chicken and set it aside.
  3. Add the cooked, crumbled bacon to the pot and stir for 30 seconds.
  4. Pour in the chicken broth, scraping up any browned bits from the bottom of the pot.
  5. Stir in the cream of chicken soup, cream cheese cubes, heavy cream, and dry ranch seasoning mix. Whisk until the cream cheese melts and the sauce is smooth.
  6. Add the uncooked gnocchi to the sauce. Bring the mixture to a simmer, then reduce the heat to medium-low, cover, and cook for 8-10 minutes, stirring occasionally, until the gnocchi is tender.
  7. Return the cooked chicken to the pot. Stir in the shredded cheddar cheese until melted and the sauce thickens slightly. If using, stir in the frozen peas during the last 2 minutes of cooking.
  8. Taste the sauce and add salt or pepper if needed.
  9. Serve immediately, garnished with fresh parsley.

Notes

  • For an extra layer of flavor, use turkey bacon instead of regular bacon.
  • If you prefer a thicker sauce, let it simmer uncovered for a few extra minutes after adding the cheese.
  • This dish reheats well; add a splash of milk or broth when reheating to restore creaminess.
