Make this rich and savory beef pasta using a simple one-pot method. This creamy ground beef dinner is perfect for quick weeknight meals and delivers high comfort food flavor.
Heat olive oil in a large skillet or Dutch oven over medium-high heat. Add ground beef and cook, breaking it apart, until browned. Drain off any excess grease.
Add chopped onion to the skillet and cook until softened, about 4 minutes.
Stir in minced garlic, Italian seasoning, salt, and pepper. Cook for 1 minute until fragrant.
Pour in the diced tomatoes (with their juice) and the beef broth. Bring the mixture to a boil.
Add the dry pasta to the boiling liquid, stirring to submerge it fully.
Reduce heat to medium-low, cover the skillet, and simmer for 12 to 15 minutes, or until the pasta is tender and most of the liquid is absorbed. Stir occasionally to prevent sticking.
Remove the skillet from the heat. Stir in the heavy cream and grated Parmesan cheese until the sauce is smooth and creamy.
Taste and adjust seasoning if needed. Serve immediately, garnished with fresh parsley.
Notes
For a high protein beef pasta option, use extra-lean ground beef or substitute half the beef with ground turkey.
If you prefer a thicker sauce, uncover the skillet for the last 5 minutes of cooking time to allow more liquid to evaporate.
This recipe works well as a one pan beef dinner, minimizing cleanup.
