Make this hearty, one-pot hamburger soup featuring ground beef, potatoes, and mixed vegetables. It is a comforting, easy meal perfect for weeknight dinners.

  • 1.5 lb ground beef
  • 1 large onion, chopped
  • 2 carrots, sliced
  • 2 celery stalks, sliced
  • 4 cups beef broth
  • 1 (14.5 oz) can diced tomatoes, undrained
  • 2 medium potatoes, peeled and cubed
  • 1 cup frozen mixed vegetables (peas, corn, green beans)
  • 1 teaspoon dried Italian seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon Worcestershire sauce

Instructions

  1. Brown the ground beef in a large pot or Dutch oven over medium heat. Drain off any excess fat.
  2. Add the chopped onion, carrots, and celery to the pot with the beef. Cook until the vegetables soften, about 5 to 7 minutes.
  3. Pour in the beef broth and add the diced tomatoes (with their juice). Stir in the cubed potatoes, Italian seasoning, salt, pepper, and Worcestershire sauce.
  4. Bring the mixture to a boil, then reduce the heat to low, cover, and simmer for 15 minutes, or until the potatoes are tender.
  5. Stir in the frozen mixed vegetables. Continue to simmer, uncovered, for another 5 minutes, or until the vegetables are heated through.
  6. Taste the soup and adjust salt and pepper as needed before serving.

Notes

  • For a richer flavor, use low-sodium beef broth and add a bay leaf during the simmering stage. Remove the bay leaf before serving.
  • If you prefer a thicker soup, mix 2 tablespoons of cornstarch with 1/4 cup of cold water and stir this slurry into the soup during the last 5 minutes of cooking.
  • This recipe works well in a slow cooker. Brown the beef and sauté the aromatics on the stovetop first, then transfer everything to the slow cooker and cook on low for 6-8 hours or high for 3-4 hours.
