Make soft, gooey cinnamon roll bites fast using refrigerated biscuit dough. These poppable treats are coated in cinnamon sugar and are perfect for breakfast or dessert.

Ingredients

  • 1 (16.3 ounce) can refrigerated biscuit dough
  • 1/2 cup granulated sugar
  • 2 tablespoons ground cinnamon
  • 1/4 cup (1/2 stick) unsalted butter, melted
  • For the Glaze: 1 cup powdered sugar
  • 2 tablespoons milk
  • 1/2 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C). Lightly grease an 8×8 inch baking pan.
  2. Open the can of biscuit dough and separate the biscuits. Cut each biscuit into four equal pieces. You should have 32 small pieces total.
  3. In a medium bowl, mix the granulated sugar and ground cinnamon together well. This is your cinnamon sugar coating.
  4. In a separate small bowl, melt the butter.
  5. Dip each biscuit piece first into the melted butter, coating all sides.
  6. Next, roll the buttered biscuit piece thoroughly in the cinnamon sugar mixture until fully covered.
  7. Place the coated biscuit pieces into the prepared baking pan, packing them in closely.
  8. Bake for 15 to 18 minutes, or until the bites are golden brown and cooked through.
  9. While the bites bake, prepare the glaze. Whisk together the powdered sugar, milk, and vanilla extract in a small bowl until smooth. Add more milk, one teaspoon at a time, if the glaze is too thick.
  10. Remove the bites from the oven. Drizzle the sweet glaze evenly over the warm cinnamon roll bites.
  11. Let cool slightly before serving. These are best enjoyed warm for that gooey texture.

Notes

  • For extra gooey centers, pour 1/4 cup of heavy cream over the bites right before baking.
  • If you want a crispier exterior, place the bites further apart on the baking sheet instead of packing them closely.
  • You can use store-bought cream cheese frosting instead of making the simple glaze for a richer topping.
