Ingredients

Scale
  • For the Cake:
  • 4 tablespoons all-purpose flour
  • 3 tablespoons granulated sugar
  • 1/4 teaspoon baking powder
  • Pinch of salt
  • 1/8 teaspoon ground cinnamon
  • 3 tablespoons milk (dairy or non-dairy)
  • 1 tablespoon melted butter or oil
  • 1/4 teaspoon vanilla extract
  • For the Swirl:
  • 1 tablespoon packed light brown sugar
  • 1/4 teaspoon ground cinnamon
  • 1/2 teaspoon melted butter
  • For the Glaze:
  • 1 tablespoon powdered sugar
  • 1/2 teaspoon cream cheese, softened
  • 1/2 teaspoon milk

Instructions

  1. Prepare the swirl mixture: In a small bowl, combine the brown sugar, cinnamon, and 1/2 teaspoon melted butter. Mix until crumbly. Set aside.
  2. Prepare the cake batter: In a microwave-safe mug (at least 10-12 oz size), whisk together the flour, granulated sugar, baking powder, salt, and 1/8 teaspoon cinnamon.
  3. Add the wet ingredients: Pour in the milk, 1 tablespoon melted butter, and vanilla extract. Stir well with a fork until the batter is smooth and no dry spots remain. Do not overmix.
  4. Create the swirl: Spoon half of the cake batter into the bottom of the mug. Sprinkle half of the prepared cinnamon swirl mixture over the batter. Top with the remaining batter, then sprinkle the rest of the swirl mixture on top. Gently swirl the top layer with a toothpick if desired.
  5. Microwave: Cook on high power for 60 to 90 seconds. Cooking time varies by microwave wattage; start checking at 60 seconds. The cake should look set on top but still slightly soft in the center for a gooey texture.
  6. Make the glaze: While the cake cools slightly, whisk together the powdered sugar, softened cream cheese, and 1/2 teaspoon milk until smooth. Add a tiny bit more milk if the glaze is too thick.
  7. Serve: Drizzle the cream cheese glaze over the warm cinnamon roll mug cake immediately. Enjoy this quick microwave dessert.

Notes

  • For a Snickerdoodle Mug Cake variation, skip the swirl and mix 1 teaspoon of brown sugar and 1/4 teaspoon cinnamon together to dust the top of the batter before microwaving.
  • If you prefer a firmer cake texture, microwave for the full 90 seconds. For a gooey center, stop cooking closer to 60-75 seconds.
  • This recipe makes one perfect single serving cinnamon treat.
