Easy Christmas Jello Poke Cake

Create a festive and ultra-moist Christmas Poke Cake using red and green Jello layers. This no-fuss holiday dessert is simple to make and perfect for your Christmas party or family gathering.

Ingredients

  • 1 box white cake mix (plus ingredients listed on box, usually eggs, oil, water)
  • 1 cup boiling water
  • 3 ounces red gelatin (like Jell-O)
  • 3 ounces green gelatin (like Jell-O)
  • 1 cup cold water (for each gelatin)
  • 1 container (8 ounces) frozen whipped topping, thawed
  • 1/4 cup festive holiday sprinkles

Instructions

  1. Prepare the cake according to the package directions for a 9×13 inch pan. Bake and let it cool on a wire rack for 15 minutes.
  2. While the cake is cooling, prepare the red gelatin. In a bowl, dissolve the red gelatin powder in 1 cup of boiling water. Stir for two minutes until completely dissolved. Stir in 1 cup of cold water. Set aside to cool to room temperature, but do not let it set.
  3. Repeat step 2 for the green gelatin.
  4. Use the handle of a wooden spoon or a large fork to poke holes all over the top of the warm cake, spacing the holes about 1 inch apart. Poke all the way through to the bottom.
  5. Carefully pour the slightly cooled red gelatin mixture evenly over the entire cake, allowing it to seep into the holes. Let this set in the refrigerator for about 30 minutes, or until the red layer is firm enough to support the next layer.
  6. Once the red layer is set, repeat the poking process over the red layer. Pour the green gelatin mixture evenly over the cake, letting it seep into the new holes.
  7. Refrigerate the cake for at least 4 hours, or until both gelatin layers are completely firm.
  8. Before serving, spread the thawed whipped topping evenly over the top of the set gelatin layers. Sprinkle generously with holiday sprinkles. Slice and serve this festive holiday dessert cold.

Notes

  • For an extra moist cake, you can substitute the water called for on the cake mix box with an equal amount of milk.
  • If you want a deeper color, use slightly less cold water when mixing the gelatin.
  • This cake is best made the day before serving to allow the Jello to fully set and absorb into the cake.
