1.5 lbs boneless, skinless chicken breast, cut into bite-sized pieces
2 medium zucchini, sliced
1 tablespoon olive oil
3 cloves garlic, minced
1 tablespoon fresh ginger, grated
1/4 cup low sodium soy sauce (or tamari for gluten free)
2 tablespoons water
1 tablespoon brown sugar (optional, for glaze)
1 teaspoon sesame oil
1/4 teaspoon black pepper
Pinch of salt, to taste
1 teaspoon sesame seeds, for garnish
Instructions
Prepare your ingredients: cut the chicken, slice the zucchini, mince the garlic, and grate the ginger.
In a small bowl, whisk together the soy sauce, water, brown sugar (if using), and sesame oil to create the sauce. Set aside.
Heat the olive oil in a large skillet or wok over medium-high heat.
Add the chicken pieces to the hot skillet and cook until browned and cooked through, about 5-7 minutes. Remove the chicken from the skillet and set it aside.
Add the sliced zucchini to the skillet. Stir fry for 3-4 minutes until the zucchini is tender-crisp. You want it cooked but still holding its shape.
Return the cooked chicken to the skillet with the zucchini.
Pour the prepared garlic soy sauce mixture over the chicken and vegetables. Toss everything together quickly to coat evenly. Cook for 1 minute until the sauce thickens slightly.
Season with black pepper and salt, if needed.
Remove the skillet from the heat. Serve immediately, garnished with sesame seeds.
