Make this creamy, cheesy chicken cauliflower rice casserole for a satisfying, low-carb, and gluten-free weeknight dinner. It is simple to prepare and perfect for family meals.

  • 3 cups cooked chicken, shredded or diced
  • 4 cups cauliflower rice (fresh or frozen)
  • 1 tablespoon olive oil
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 cup broccoli florets, small
  • 8 ounces cream cheese, softened
  • 1 cup chicken broth
  • 1 teaspoon dried Italian seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 1/2 cups shredded cheddar cheese, divided

Instructions

  1. Preheat your oven to 375°F (190°C). Lightly grease a 9×13 inch baking dish.
  2. Heat the olive oil in a large skillet over medium heat. Add the diced onion and cook until soft, about 5 minutes. Add the minced garlic and cook for 1 minute more until fragrant.
  3. Add the cauliflower rice and broccoli florets to the skillet. Cook, stirring occasionally, until the cauliflower rice has softened slightly, about 5 to 7 minutes.
  4. Stir in the shredded chicken, softened cream cheese, chicken broth, Italian seasoning, salt, and pepper. Mix until the cream cheese has melted and the mixture is creamy.
  5. Remove the skillet from the heat. Stir in 1 cup of the shredded cheddar cheese until combined.
  6. Transfer the mixture to your prepared baking dish. Sprinkle the remaining 1/2 cup of cheddar cheese evenly over the top.
  7. Bake for 20 to 25 minutes, or until the casserole is bubbly and the cheese on top is melted and lightly golden.
  8. Let the casserole rest for 5 minutes before you serve it.

Notes

  • For a lighter version, substitute the cream cheese with 1 cup of plain Greek yogurt, mixing it in during step 4.
  • You can use rotisserie chicken for quick prep time.
