  • 2 cups cooked wild rice
  • 2 cups cooked, shredded chicken (use chicken thighs for extra flavor)
  • 1 (10.5 ounce) can cream of mushroom soup
  • 1 (10.5 ounce) can cream of chicken soup
  • 1 cup chicken broth
  • 1 cup frozen mixed vegetables (peas, carrots, corn)
  • 1/2 cup chopped onion
  • 1/2 cup sliced mushrooms (optional, but recommended)
  • 1/2 teaspoon dried thyme
  • 1/4 teaspoon black pepper
  • 1 cup shredded cheddar cheese
  • 1/2 cup crushed butter crackers (for topping)
  • 2 tablespoons melted butter (for topping)

Instructions

  1. Preheat your oven to 375 degrees Fahrenheit. Lightly grease a 9×13 inch baking dish.
  2. In a large bowl, combine the cooked wild rice, shredded chicken, cream of mushroom soup, cream of chicken soup, chicken broth, frozen vegetables, chopped onion, mushrooms, thyme, and pepper. Mix these ingredients until they are fully combined.
  3. Spread the chicken and rice mixture evenly into the prepared baking dish.
  4. Sprinkle the shredded cheddar cheese over the top of the mixture.
  5. In a small bowl, mix the crushed butter crackers with the melted butter. Sprinkle this topping evenly over the cheese layer.
  6. Bake for 25 to 30 minutes, or until the casserole is bubbly throughout and the topping is golden brown.
  7. Let the casserole rest for 5 minutes before you serve it.

Notes

  • You can substitute chicken breasts for chicken thighs if you prefer white meat.
  • For a make-ahead option, assemble the casserole completely, cover it, and refrigerate it for up to 24 hours. Add 10 minutes to the baking time if baking directly from the refrigerator.
  • Use leftover cooked chicken or rotisserie chicken to make this a quick dinner idea.
